While charcoal grilling has been a huge part of outdoor cooking most everywhere for decades, but the smoking of meats has generally been associated with commercial operations.
That has changed over the years with many of manufacturers of the outdoor grills started making smokers for the residential market.

The charcoal smoker uses the heat created from the heating up of charcoal briquets which in turn warms a pan containing water and wood chips to produce the smoke.
The smoke in turn heats up and cooks the meat at a lower temperature over a longer period of time. You only need to check on it occasionally to check the meat temperature and the wood chips to ensure the smoke continues to be flow.
