How to Make London Broil Jerky

London broil is a beef delicacy that is broiled and marinated until it becomes soft and edible.

Ingredients:

  • 2 lbs. London broil
  • ¾ cup coconut aminos (alternative for soy sauce)
  • ¾ cup Worcestershire sauce
  • 1 tsp. Garlic powder
  • 1 tbsp. Smoked paprika
  • 1 tsp. Onion powder
  • 1 tbsp. Honey
  • 1 tbsp. Black pepper
  • 1 tsp. Red pepper flakes

Instructions

Preparing the Meat

London Broil Jerky

When preparing the meat, you can either make your own London broil or buy a ready-to-use London broil. It’s essentially a cut of the top rounds with few tendons and low-fat content.

How to cut London broil for beef jerky? Slice the meat into strips about 1/8 inch thick and against the grain. If you face problems with slicing it, put it in the freezer, long enough to firm it up for slicing. This way, the jerky will be chewable. But, you should expect that the meat will acquire a different texture.

Keep in mind that the texture plays important role in making jerky. To avoid difficulty in slicing the broil, let it stay in the freezer until it becomes firm. Thus, easier to slice.

Making the Marinade

The marinade is also essential when making London broil jerky. Making the marinade is very easy as long as you have all the necessary ingredients (listed above).

Mix all the ingredients thoroughly until you obtain the desired flavor. Using the coconut aminos will balance the saltiness of the mixture.

Cover the entire meat strips with the marinade so that the taste will absorb into the meat.   Make sure that the meat is submerged in the marinade.

Refrigeration

The next step is to let the marinated meat stay in the refrigerator for 6 to 12 hours. Cover the bowl with plastic cellophane before putting it inside the refrigerator.

Remove the meat from the refrigerator after the required time. Dry the meat strips using paper towels. Make sure that all the fluids are absorbed by the paper towel. Place the meat strips on the baking rack.

You can also dry the meat by putting it again in the refrigerator after wiping it with paper towels. Let it sit inside the refrigerator for 30 minutes or until the meat dried off.

Dehydration Process

The dehydration process is essential to make jerky. You can dehydrate the meat by using a gas smoker, an oven, or a food dehydrator. Make sure to set the temperature between 150 to 160° Fahrenheit. You should not use a higher temperature because the London broil is cooked already. Otherwise, the result would be nasty.

If you will use an oven for the dehydration process, see to it that the door is slightly open. This is to allow the internal moisture to escape. Thus, facilitating an efficient dehydration process. A gas smoker has vents that allow the moisture out.  On the other hand, the food dehydrator has a built-in mechanism that aids to control moisture.

How to Tell If The Meat is Already a Jerky

If you follow the dehydration temperature cited above, you can expect that the London broil will become jerky within 6 to 8 hours.

However, if the meat is thick, you can extend the time. The texture of the meat will help you to determine if is jerky. You can try bending the meat and if it does not break, then you have achieved a well-done London broil jerky.

Storing the Jerky

After the London broil jerky was cooked, you can serve it. However, it can’t consume the jerky, the best way to store it is by keeping the jerky in an airtight container. This will prevent the London broil jerky to spoil quickly. Keep it inside a refrigerator and it will last for a month. Putting it in the freezer makes the jerky safe to consume for four months.
